Learn how to prepare a delicious salad with sweet Tahini dressing to accompany a healthy meal that you can take advantage of on any occasion.


Ingredients for the salad:

  • 3 cups shredded or chopped cabbage
  • 1 cup grated carrots (about 1 large carrot)
  • 3/4 cup cucumber grated (with peel)
  • 1/2 cup sweet onion, thinly sliced
  • 1/4 cup sweet onion, grated
  • 1 1/4 cups finely chopped parsley (stems too!)
  • 1/2 cup unshelled hemp seeds, organic
  • Optional: chopped walnuts and / or raisins or dried cranberries

Sweet Tahini Dressing:

Note: Make sure you have your tahini well stored – you’ll want a light one to serve. If the tahini is too dry you will have to add a little oil to loosen it.

Ingredients for the dressing :

  • 2 tablespoons of Tahini (buy it already made or make it) You can see here how to make tahini at home.
  • 2 tablespoons of pure honey
  • 2 tablespoons apple cider vinegar
  • Juice of 1 small lemon
  • 1/2 teaspoon garlic powder
  • salt and pepper to taste

Instructions:

1. The salad is pretty simple. Just chop and add everything to a large bowl. Mix the vegetables and they are ready to mix with the dressing.

 

 

2. Dressing : Again, easy! Combine all the ingredients and stir until everything is combined. Taste and add salt and pepper to taste. Actually, just add a pinch of salt – it really doesn’t take much with all the vinegar and lemon juice flavor.
Stir well until the dressing is creamy.

3. Mix the salad with the dressing. Use as much or little dressing as you like.

 

 

Serve immediately . If you want to make this salad ahead of time – you may want to chop the cabbage instead of shredding – shredding makes the salad soggy. But if you use a thicker cabbage – it will stay nice and cool chilled in the fridge.
