Ingredients for sweet potato noodles

- 3-4 medium sweet potatoes, peeled and spiralized
- 1/2 kilo or one pound mild steak, thinly sliced
- 1 broccoli head, chopped
- 1/4 cup coconut aminos or soy sauce
- 3 teaspoon honey
- 1 teaspoon white vinegar or rice wine
- 2 teaspoon arrowroot powder
- 1/4 teaspoon black pepper
- Optional – sesame seeds and chopped green onion for serving
Instructions
Start by spiralizing the sweet potatoes. Once spiralized, turn Instant Pot to “saute” for 10 minutes. Add the coconut oil to the pot.
Sauté the sweet potato noodles for 10 minutes, stirring frequently to soften them. Once cooked, remove them from the Instant Pot and set aside until served.
While the sweet potato noodles are cooking, slice the steak and cut the broccoli into small pieces.
Mix together the coconut aminos / soy sauce, honey, arrowroot powder, vinegar, and black pepper.
Place the steak in the bottom of the Instant Pot and add the broccoli to the top. Pour the previous sauce over this.
Secure the lid on the pot and turn the knob to “Sealed.” Select “Pressure Cook” or “Manual” and set the time to 8 minutes. Allow the pot to complete the cycle and allow it to release naturally for 5 minutes before carefully switching to manual.
