Ingredients for the lemon cake

  • 2 cups of coconut butter
  • 3 teaspoons of liquid stevia (or 1 teaspoon of powdered stevia extract)
  • 6 large organic eggs
  • 4 cups almond flour, sorghum or a gluten-free all-purpose flour
  • 1/3 cup fresh lemon juice
  • ¼ cup coconut milk (or almond milk
  • 4 teaspoons lemon zest
  • 1 teaspoon pure vanilla extract

Instructions for making the lemon cake

  1. Preheat the oven to 150ºC, use a non-stick spray or coconut oil to cover a loaf pan of approximately 25 centimeters.
