Today, preserving food is a necessary task . The limitations that we encounter, such as food shortages, states of contingency and others, push us to start making an ancient art that was lost when the system began to provide us with food in the supermarket. But it is not always necessary to follow these guidelines, especially if we always want to have abundant food in our warehouse. Fruits and vegetables can be preserved and made to last throughout the year. There are several methodologies for this, so you can preserve avocados, tomatoes, cucumbers, oranges, peppers, and almost anything you want.
The following is one way to preserve lemons. It is a simple and cheap way using sea salt. Using this technique means that the salt molecules mix with the food molecules, change their chemical composition, and make it more likely not to spoil. Do not forget to get glass jars with a hermetic lid, it can be the size that best suits you and according to the amount of product to be stored.
How to preserve lemons
Ingredients
- 8-10 large lemons, sanitized
- 1/2 cup sea salt , more if needed
- Lots of freshly squeezed lemon juice
Method
- Sterilize a glass jar
- Add 2 tablespoons of salt to the bottom of the pot
- Cut the lemon into quarters
- Salt the lemons generously
- Put the lemons in the jar by squeezing so they settle at the bottom, letting the juice remain at the top.
- Keep putting salt between the layers of lemons
- Put all the lemons that can fit in the pot. Cover them with more salt and seal the lid very tightly.
- Place the jars in a room temperature room for a couple of days. Shake the cans from time to time. Put them in the refrigerator for at least three weeks, until the lemon peels soften.
- To use, remove the lemon from the jar and rinse it to remove the salt and seeds (and pulp if desired)
- Store in the refrigerator for at least 6 months.
