Spicy Veggie Burger

For 4 vegan burgers

  • 15 oz beans (cooked beans), drained
  • 1 1/2 cups cooked brown rice, short grain (stickier the better)
  • 1 teaspoon apple cider vinegar
  • 2-4 tablespoons nutritional yeast
  • 2 teaspoons of hemp seeds
  • 1 teaspoon spicy unsalted powdered spices (a mixture of black pepper, onion, garlic, paprika, turmeric, cayenne)
  • 3/4 teaspoon paprika
  • 1/4 cup red onion, diced
  • 1/3 cup kale / kale, finely chopped
  • 3 garlic cloves, minced
  • 1/4 cup vegan spicy sauce
  • 1/4 teaspoon sea salt
  • fresh black pepper to taste

Optional complement for the veggie burger

* Roasted corn
* Chopped
peanuts * Lentils
* Chopped bell pepper
* Parsley
* Flax seeds
* Cooked sweet potato cubes
* Drizzle of pumpkin seed oil
* Chopped jalapeño and / or pepper for extra spice

For the hamburger assembly:

* Sprouted wheat sprouts
* Spicy mustard and vegan chipotle mayonnaise (a pinch of chipotle powder with regular vegan mayonnaise)
* Tomato + onion + lettuce + sprouts
Avocado in lemon juice and pepper

  1. Add the drained cooked brown rice with the cooked beans to a large mixing bowl. With a large fork, flatten the beans. Grind at least 60-75% of the beans to create a doughy texture.
  2. Mix all remaining ingredients – add nutritional yeast one teaspoon at a time and use to thicken as needed. Also this adds a lot of cheese flavor.
  3. Heat 1 tablespoon of sunflower oil in a large skillet.
  4. Form round flattened buns. You should get about 4 large burgers from this recipe.
  5. Add the buns to the hot oil. Allow patties to absorb some of the oil then flip quickly so that each side has a thin layer of oil for the saute process.
  6. Cook for about 3 minutes on each side. You want the burgers to be well browned, but not burnt. Then finish the burgers in the oven at 190 ° C for about ten minutes – this really makes the edges crisp. This step is optional.
  7. Remove from skillet and oven or place on plate until ready to assemble patties.

Method without frying by oil. For a healthier method, you can just bake these burgers without having to pre-oil them in the pan. 190 ° C is suggested for 15-20 minutes. Or you can make a very quick stir fry combo method and then finish in the oven.

Serve with: green leaf lettuce, sprouts, avocado, vegan chipotle mayonnaise, spicy mustard, tomato, a pinch of pepper and sprouted wheat sprouts. Serve hot.
