Benefits of mushrooms
Fluffy and famous for their meat-like texture, mushrooms are edible mushrooms that figure prominently in our meals. Once considered an exotic ingredient, today they are readily available and used in most dishes such as soups, salads or stir fries.
There are several types of mushrooms that can be eaten and enjoyed, such as common mushrooms, healthy shiitake, oyster mushrooms, or the popular Kashmiri guchchi.
Cream of mushroom soup
Without further ado, let’s move on to the recipe to enjoy this cream with healthy ingredients :
For 4 people:
- 1 clove garlic.
- 250 grams of mushrooms.
- 1 tablespoon of cornmeal.
- 3 egg yolks.
- 1 glass of dry sherry.
- 1250 ccs of milk.
- 125 ccs of liquid cream.
- A pinch of parsley
- 1 leek
- 1 pinch of salt.
- 1 carrot
In a saucepan with a little oil, put the garlic, the leek, the carrot and the mushrooms, all filleted, sauté a little, add the sherry and after a while a little water.
Cook for 20 or 30 minutes and strain the broth. The mushrooms are finely chopped and the milk is added to the broth and when it boils, the finely chopped mushrooms and a little corn flour are added to thicken it.
Leave it for 5 minutes, add the yolks and the splash of cream is off the heat. Add salt and serve.
