Broccoli Kale / Kale Soup

  • 2 tablespoons of extra virgin olive oil
  • 8 cups vegetable broth (gluten-free and yeast-free)
  • 4 broccoli stalks, chopped
  • 4 stalks of celery
  • 2 large handfuls of kale
  • 2 handfuls of spinach

Method

Heat the olive oil in a large pot. Add the vegetable broth and bring to a boil. Once it boils, add the broccoli. Cover and simmer 10 minutes or until bright green. Add the celery and kale, and cook for 4 minutes. Remove from heat. Add the spinach, tahini, and sea salt, and stir. Let it cool for at least 15 minutes, then transfer to a blender and blend until smooth. Heat up again and enjoy.
