To make your avocado sandwiches, start by combining cauliflower with sea salt in a bowl. Stir well and let the mixture sit for 20 minutes to extract moisture. Use a clean kitchen towel to firmly squeeze the cauliflower to make it as dry as possible; otherwise, you will end up with soggy bread.
Tip: If you’ve bought fresh bagged cauliflower at the store, it’s usually dry enough to skip this step.
Return the cauliflower to the bowl and add the egg, almond flour, and black pepper. Mix well. The mixture should be slightly damp, but not runny. Scoop the mixture out one cup at a time and place it on a parchment paper lined baking sheet. Use your hands to form the mixture into four squares, pressing the top and sides with your fingertips to keep the mixture together. Bake for 25 minutes, then cool for 5 minutes.
Next, grease a cast iron skillet or skillet with butter or ghee over medium heat. While the skillet is heating up, spread a slice of cauliflower bread with mashed avocado and top with another slice of cauliflower bread. Grill in the hot skillet for 2-3 minutes, then flip and cook 3 minutes on the other side. Repeat with the remaining slices of bread. Serve your avocado sandwiches hot!
Avocado Sandwiches with Gluten Free Crispy Cauliflower Bread

Ingredients – Serves: 2
- 4 cups cauliflower rice
- ½ teaspoon sea salt
- 2 free range organic eggs
- ⅓ cup of almond flour
- ¼ teaspoon black pepper
- 1 teaspoon of butter
- 2 ripe avocados, mashed
Instructions
1. Preheat the oven to 200ºC and line a baking sheet with parchment paper.
2. In a bowl, combine the cauliflower rice (previously processed) and sea salt. Let stand for 20 minutes.
3. Use a clean kitchen towel to squeeze the cauliflower to remove any moisture.
4. Return the cauliflower to the bowl and add the eggs, almond flour, and black pepper. Stir well to combine.
5. Place 1 cup of the mixture on the prepared baking sheet and form a square. Repeat with the remaining mixture (4 slices total).
6. Bake for 25 minutes, then cool to room temperature for 5 minutes.
7. Grease a frying pan with butter and melt over medium heat. While the skillet is heating up, spread a slice of cauliflower bread with a little avocado and top with another slice of cauliflower bread.
Add to hot skillet and cook for 2-3 minutes. Flip and cook 3 more minutes. Repeat with the remaining bread. Serve hot.
Note: you can also do this procedure separately using only the cauliflower bread tops without the avocado, to later form the sandwiches. You can also make your sandwiches of what you like the most: ham, chicken, tuna salad, potato salad combined with your favorite vegetables and dressings. In creativity there are no limits!
